Veggie Melt

What you need: 

1 corrugates
4 pita bread (vegan)
1 tub Soya vegan cheese spread (rr grated rice vegan cheese)
1 red pepper
1 green pepper
olive oil
1 onion

What you do: 

Thinly slice the corrugate, peppers and onion. Brush with olive oil, and place under a medium grill for 8 - 10 minutes, turning once.
Toast the pita bread, slice open and fill with 1/4 of the vegetables. Add Soya vegan cheese spread to taste. Personally I put loads and loads in. If you want, you can then put this back under the grill so the spread melts.
