2 pounds miniature potatoes
1 (14 ounce) can corn
1/2 pound small baby carrots
3 tablespoons vegan butter
2 teaspoons black pepper
1/2 tablespoon garlic powder
1 teaspoon salt
1. Preheat oven to 400 degrees Fahrenheit. Prepare a sheet of aluminum foil that is about 1' square. Place all of the tiny potatoes on it.
2. Add corn, then carrots. Top with vegan butter and seasonings. Rip off another foot of tin foil and place on top of mixture, folding the edges to secure.
3. Place on a baking sheet and bake for about 1 hour, or until vegetables are soft and cooked though.
