4-6 Tablespoons olive oil
1 head celery
2 lbs. (1 bag) carrots
5 lbs. (1 bag) potatoes
2 cans of corn
2 cans of whole tomatoes
3-5 bay leaves
salt and/or veggie soup base to taste
Optional: 1 can of white beans
In a very large pot, coat the bottom with oil. Chop the onions and celery, peel and chop the carrots, and chop the potatoes.
Heat the oil and add the onions and celery; cover and sauté for about 5 minutes. Add the carrots; cover and sauté for 5-8 minutes. Add the potatoes; cover and sauté for 5-10 minutes.
Then add the corn, tomatoes, and bay leaves and cover with water. Add salt, soup base, or white beans (if desired). Cover and bring to a boil and simmer for 30-60 minutes, or until potatoes are soft.
