Veggie Tacos

What you need: 

1 large zucchini chopped into 1/4 wedges
1 large Tomato chopped into 1/4 wedges
2-3 chopped scallions
16 oz can drained black beans
8 oz drained cut yellow corn (frozen or canned)
2 teaspoon Tabasco sauce
salt to taste
pepper to taste
Cilantro to garnish
Corn tortillas
Top with cheese imitated soy product (optional)

What you do: 

In a sauce pan on medium add zucchini and scallions. When zucchini is almost tender add black beans, tabasco and corn. Stir well and add salt and pepper to taste. When done add fresh chopped tomato to the mixture. Mix all ingredients well and spoon on to warm tortillas. Top with cheese substitute soy product or with avacado slices. Enjoy!

SO HOW'D IT GO?

This was surprisingly yummy.. I didn't really expect it to be a nice as it was!  I used red kidney beans as I didn't have any black beans.. with good results.  Topped mine with tomato salsa instead of vegan cheese.  MMM MMMM!!

Wow this is a great recipe!  It was incredibly easy to prepare, quick to cook, and has a phenomenal taste!  Incredible!
