Very Simple Blueberry Muffins

What you need: 

1 1/2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon salt
3/4 cup nondairy milk
1/4 cup vegetable oil
1 cup frozen blueberries

What you do: 

1. Preheat oven to 400 degrees F. Place baking cups in a muffin pan.
2. In a mixing bowl, combine flour, sugar, baking powder, and salt. Stir in nondairy milk and oil.
3. Fold in blueberries. Pour into baking cups and bake for 25 to 30 minutes.

SO HOW'D IT GO?

YUMMMMMMY! My kid loved these!  Only small alteration: used all oat flour (ran steel cut oats in a blender) instead of white flour, and they are still GOOD!  Thank you for posting this simple and easy recipe.

my batter was unusually thick so I added about 1/4 more milk. also I used fresh blueberries.

they came out great! sooo good. next time i will put less batter in each muffin cup however because they rose more than I expected. i filled 10 muffin cups out of 12.

I just discovered this recipe last week, and have already made my second batch of these amazing blueberry muffins! I make them subbing apple sauce for the oil and using a whole container of fresh blueberries. The first time I made them, I threw in a smashed banana (which came out great!) and the second time I made them, I left the banana out (still great!) My non-dairy milk of choice is vanilla almond milk. It gives these muffins just the right amount of sweet! Great recipe!

I really like these but they didn't rise very much.I think i am going to follow some of the suggested comments for making them strawberrie.But if theres any way to make them rise better i love to know.

I tried this recipe. It was very good. I found the addition of a smashed banana worked well to bind it a little better as well as enhance the flavor. Doubled the recipe and the first 6 I made without the banana and then added. They were good, but not as good as the ones after. They just seemed to be missing something before.

I had no trouble making these, they came out very good. I added a topping of cinnamon and sugar. I'm making this again right now.

Just made these muffins but Im not really impressed. I also substituted apple sauce for oil and added few raspberries, and nuts. I got 10 mefium sized muffins that were ready in just 20 minutes, tops little bit burned. I think they do not have the softness and flavour Im used to in other muffin recipes, will not be maiking these again.

A very simple, sweet, dessert.

Turbinado, 2 cups blueberries!
