Very Simple Blueberry Muffins

What you need: 

1 1/2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon salt
3/4 cup nondairy milk
1/4 cup vegetable oil
1 cup frozen blueberries

What you do: 

1. Preheat oven to 400 degrees F. Place baking cups in a muffin pan.
2. In a mixing bowl, combine flour, sugar, baking powder, and salt. Stir in nondairy milk and oil.
3. Fold in blueberries. Pour into baking cups and bake for 25 to 30 minutes.

SO HOW'D IT GO?

It was very yummie. I made them into lemon blueberry muffins. I added a tsp of lemon juice into the soymilk and 1 tbsp of lemon zest. It was delicious but it didn't rise so much so next time I'd put baking soda.

I also made a batch after that using all whole wheat flour and they tasted fantastic I added in 1/4 tsp baking soda and half a tsp more lemon juice and they were great. They were not dense at all. Very fluffy and had a nice crumb like texture but they didnt crumble and fall apart. Yums

These are delicious and really did only take about five minutes to make.  I love "chopping" blueberry muffins into a bowl of vanilla Coconut Bliss (non-dairy ice "cream" made out of coconut milk and agave syrup), and these muffins worked perfectly.

Loved these muffins, very very easy to make! Very tasty - a great breakfast treat. I made 12 small rather than 6 large which will hopefully help them go a bit further :)

My roomies and I enjoyed these muffins quite a bit. They weren't overly sweet, so one could eat them for breakfast  ;)

I doubled this recipe and used fresh blueberries and the end product was good but not sweet  enough for my liking. i would consider doubling the sugar. Also, when i mixed the batter I had to add a lot more soy milk then called for.

Yummy!! I made two batches and used mini muffin pans and baked for 15 minutes. The blueberry muffins I used the exact recipe except used whole wheat flour. They were very yummy and not to sweet which I prefer. My fiance prefers them to be much sweeter so I tried my next batch. This time I used raspberries and used applesauce instead of the oil and also added another 1/4 cup of sugar. HE LOVED them!!  I think next time I'll add some soy butter to give them more of a buttery flavor yummmmmmy

Can we say  super easy and super good.  I didnt have any oil or applesauce so I used a container of soy strawberry yogurt.  I also didnt have any blueberries so I tossed in some vegan chocolate chips.  They were good and didnt take any effort.  I have tons of ideas for these!!!! Thanks for this simple delicious recipe!!! :-D ;D :-D ;D :)>>>

I also added a crumb topping before putting in the oven soy butter, flour sugar.

wow... amazing. mine got huge peaks, though.. kinda look hilarious. just be sure that AFTER the blueberries are added, dont mix TOO much, othrwise your batter will be purple.

also.. the tops are delicious and crunchy. i shouldve sprinkled some sugar chunks on the tops before baking!
otherwise, they turned out really well!

I do love the simplicity of this recipe ... I made mini muffins (17 mins was perfect cooking time), substituted apple sauce for oil, and added extra sugar and blueberries.  For mini muffins, I think I had too many berries and not enough batter.  SO next time I think I will stick with the recommended # of berries.  Also, I think I will try a flax replacement for the oil instead of the apple sauce.
Overall, they a great to pop in the mouth for breakfast, snack, or after dinner dessert.
