Very Simple Blueberry Muffins

What you need: 

1 1/2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon salt
3/4 cup nondairy milk
1/4 cup vegetable oil
1 cup frozen blueberries

What you do: 

1. Preheat oven to 400 degrees F. Place baking cups in a muffin pan.
2. In a mixing bowl, combine flour, sugar, baking powder, and salt. Stir in nondairy milk and oil.
3. Fold in blueberries. Pour into baking cups and bake for 25 to 30 minutes.

These are way too easy to make and so good. I add a bit more blueberries and some cranberries or craisins when I have them.

These were nice, very fluffy! I added some more sugar, and would add more next time. I'd also cut down on the salt a little. I made them with Shamandura's crumbs (in the pictures), and they were a great hit! So simple to make!

Thanks for the great recipe!!!! I have been making these for the last couple of months - every weekend!!!! I love them with blueberries and my daughter loves them with chocolate chips. We usually add a crumb topping to them and I double the recipe and fill the muffin cups to the very top so they are come out huge. This is a very versatile recipe!!!! Thanks again!!!!!!!!!

thank you for such a great recipe! as others have said, it's great to have a go-to recipe that has such simple and inexpensive ingredients.

my modifications:
1/2 cup all-purpose flour, 1/2 cup white whole wheat flour, & 1/2 cup wheat germ
1/4 cup applesauce for the oil
skimped on the sugar
EXTRA blueberries!!!
baked @ 350 (my oven runs hot!) for 25 minutes

my changes definitely made these muffins denser & gooeyer (is that a word?) but hubby & i actually really liked them that way! can't wait to try these with raspberries! ooo and zucchini & chocolate chips (someone mentioned that...brilliant!)

These were absolutely delicious. However they didn't rise as they should have.
Next time I will add baking soda and vinegar to the mix to get a bigger muffin.
I did have to add an additional 3/4 cup of soy milk and 1/8 cup of oil and used huge
frozen blueberries.
They were done in 25 minutes and just fell out of the pan perfectly.
I made 18 muffins with this batch.

This was a great recipe.  I did however tweaked it a bit.  Instead of 1 1/2 cup of flour I just used 1 cup.  I had made some of "Easy Granola" which is on VegWeb and use a half of cup in this recipe..  This is definately a winner!

Two thumbs way up. We used dried blueberries (cause they're not in season), a little more flour, oat flour, and 1 banana (for flavor). They're good! Really good. They had to go the full 30 min to be really done. I didn't like the way they were so light in the picture, thought that might mean they don't really get done, but that wasn't true. Ours are still light, but have browned at the tips of the dough and they're done all the way through. I would totally make these again. I might even do cranberry or cherry next time.

Oh, and I used water instead of plant milk since I was out... still delicious :)

I love that this is made with stuff I ALWAYS have. 
And it is amazing for how little ingredients it uses.  Well, its amazing anyways, but whatever.  I basically coated the muffins with cinnamon/sugar, delicious :)  Making them for my track brunch tomorrow.
