Vivacious Vegetable Stew

What you need: 

1/2 an onion, chopped
2 carrots, peeled and sliced
1/2 red pepper, chopped
can of sweet corn, drained and rinsed
can of sweet peas, drained and rinsed
can of butter beans, drained and rinsed
1/2 cup green beans (mine were leftovers)
4 1/2 cups vegetable juice cocktail (big can)
2 1/2 cups water
1 1/2-2 cups pasta (I used penne, but whatever you’ve got works)
pepper to taste
1 tablespoon cornstarch mixed with 1 tablespoon cold water (optional)
you can use leftover brown rice, millet, quinoa, whatever grain you have

What you do: 

The vegetables are optional. You can add whatever veggies you have on hand. It's a clean out.
Spray big pot with cooking spray. Put chopped onion in and cook for a few minutes. add in carrots and pepper and cook until soft. Add the vegetable juice and water, and simmer a few minutes. Add in the corn, peas, butter beans, and green beans. Let simmer. Add pasta or other grain and let cook until cooked through. Add optional cornstarch mixture. Add pepper to taste, and serve hot with whole grain bread. If its too thick for your liking, add 1/2 cup water.
I love to microwave a vegan veggie burger and chop it up, and mix it in my bowl for protein.
