SO HOW'D IT GO?

There is an excellent, simple recipe for pancakes/waffles in Erin Pavlina's 'Raising vegan children in a non-vegan world':

1 c. unbleached all purpose flour
1 tablespoon sugar
2 tablespoons baking powder
1/ tsp. salt
1c. soymilk
2 tbs. vegetable oil

*You can add blueberries, chocolate chips, flax seeds, bananas, etc to the pancakes/waffles for an added treat!*

I have used this recipe time after time and it's great.

I haven't tried the waffles submitted here by ''SignerRN'', but I did try these Erin Pavlina waffles and they are awful.  They stuck to my well oiled waffle iron horribly.  I tried to make the rest as pancakes.  They didn't stick to the griddle, but they tasted like salt.

These are FANTASTIC!  I added almonds and served them with balsamic vinegar.

I am totally looking forward to giving these a try!
Love the no flour, no sugar recipe - and dates and maple syrup are my favorite sweeteners! :)

I thought these were really good too! They definitely  taste healthy but that's not a bad thing. I ate them with sliced strawberries and soy whipped cream on top. Delicious!

goodness gracious, where is my mind? I also added 2 tablespoons of maple syrup before blending. I really think that's it now. but give a try to my version if you don't like the original, I promise it's really good.

so I finally tried them this morning and they taste as good as they look. I don't understand why everyone else seems to be disappointed by this recipe.

This is not a *basic* waffle recipe. For a basic waffle recipe, refer to the recipe I posted by Erin Pavlina. Maybe this should be listed as 'Coconut/seed/cornmeal/date waffles'? There are a lot of eclectic ingredients in this recipe.... :P
