Walnut Burgers

What you need: 

2 tablespoon margarine, 2 tablespoon flour, 1/2 teaspoon salt
2 cup soy milk
1-1/2 cups toasted bread crumbs
Ener-G Egg Replacer for 2 eggs
1/2 cup chopped onion
1 teaspoon seasoned salt
1 cup finely chopped walnuts or pecans
1 cup cooked rice
1/2 cup chopped olives

What you do: 

Blend margarine, flour and salt over low heat. Stir in milk and cook until thickened; simmer about 2 minutes, stirring constantly. Remove from heat; add remaining ingredients; mix well; chill. Form into patties, roll in flour or cracker crumbs, and saute or bake until brown.
Serve in buns, or with tomato sauce or mushroom gravy, if desired.

SO HOW'D IT GO?

Sounds delicious:) Going to try this! Might leave out the bread crumbs and use ground nuts instead. I don't have egg-replacer so I'll use ground flax/linseed and post the results. Really nice recipe - can't wait!
