White Chili

What you need: 

1 3/4 cups textured soy protein chunks
15oz vegetable stock
1 small can diced green chilies, drained
2 teaspoons ground cumin
1 tablespoon extra virgin olive oil
2 tablespoons diced onion
2 cans great Northern beans, rinsed and drained

What you do: 

In a medium saucepan, simmer textured soy protein chunks in veggie broth until tender.
Stir in remaining ingredients and cook 8-10 minutes.

SO HOW'D IT GO?

This chili was soooo yummy, even my meat eating mom and gramma liked it! The only changes I made were cutting the cumin down by 1/2 and adding a 1/2 can more of green chili, these beans were so good and super fast, I'll def. be making them again.
