White Roni

What you need: 

1/2 cup dried whole wheat pasta (I use elbows )
1/2 cup frozen peas
1 to 2 tablespoons vegan margarine
1 to 2 tablespoons dried oregano or Italian seasoning
Vegan Parmesan, to taste

What you do: 

1) Bring enough water to cook pasta in to a boil. Add pasta and frozen peas and cook according to package directions. Drain and return to pan.
2) Add margarine and seasoning. Stir until it's all melted. Divide into bowls, top with desired amount of vegan Parmesan, stir and serve.
Both of my kids go ape for this. My 4 year old asks for it nearly every day. Don't ask me why, but he is the one who started calling it "White Roni" It's a nice fast meal that kids will love, and is fairly nutritious.
Source of recipe: I came up with it on my own, as a quick meal for my kids one day.
