Who Knew It Was Vegan Pumpkin Cookies

What you need: 

nonstick spray
2 cups brown sugar, firmly packed
2 cups canned pumpkin
1 cup vegetable oil
2 teaspoons vanilla
4 cups all-purpose flour
2 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon ginger
1 cup nuts, chopped
1 1/2 cups raisins, optional

What you do: 

1. Preheat oven to 350 degrees F, and grease a baking sheet. Beat vegan sugar, pumpkin, oil and vanilla.
2. Sift together dry ingredients. Stir into the pumpkin mixture until smooth. Blend in raisins and nuts.
3. Drop by spoonfuls on prepared baking sheet, and bake for 12-15 minutes.

i substituted unsweetend applesauce for oil.
works just as well, and is much healthier!

these are ridiculously good. stupid good. i exchanged half the all purpose for wheat flour, and half the oil for organic, unsweetened applesauce. i used chopped pecans and some raisins. somehow, i didn't have any cinnamon...i used ground cloves instead, but i do think i miss the sweetness it may have offered. but really-- these are A+. thank you!!!!

so I make these at least once a week but instead of pumpkin I use the fruit pulp thats leftover after making juice in a juicer (super tasty :)).  I live in a house full of omnis and they think all my food's weird, but they just love these cookies.  I added fresh picked blueberries instead of raisins last time and they came out crazy good. I think I'll try oats and chopped strawberries this time too, that sounds deee-licious.

These cookies were just spectacular!!! I made them last night and gave a few to my vegetarian/omni friends (and omni family) and they couldn't even tell that they were vegan!! I cut the recipe in half and sprinkled walnut pieces on a few of them to give them a kind of "pumpkin pie" feel. They also go great with vanilla icecream or frozen vanilla yogurt!!(or the vegan equivalence of course!) Thanks for the great recipe and I'll post my pictures as soon as I upload them  :>

i'm going to concur w/the consensus - these cookies came out kinda "cake like".  I have to wonder if perhaps cutting the baking soda and baking power in half would make them more "cookie" like?

instead of using a cup of oil, i used 1/2 cup of oil and for the other 1/2 cup, i substituted an equal amount of non-sweetened applesauce (come to think of it, considering these were pumpkin cookies, i should have used cinnamon applesauce, oh well - next time).

i had meant to add some ground flax seeds but i forgot - i'm glad to see that others did add it with success though.

these were some of the best, most original cookies i've baked, and my goodness - it's so easy to make a big batch!!!

these were super easy to make and came out really well. i cut the recipe in half. i only had cinnamon on hand, so that's all i used. i also did not add nuts or raisins, but instead chocolate chips! they were delicious. my dad also loved them.

I adore these unique, cakey yum yums!  Of course, I love just about anything with pumpkin involved....

I also made a simple sugar glaze to drizzle on top.....shiny cookies taste good!

Did u follow the recipe exact, or make any modifications? The pic of your cookies turned out so nice! I bought some pumpkins cookies that looked just like yours and I am hoping to make mine turn out like that when I try this recipe.

Really pretty good... the first time I omited the nuts and raisins and just added semi-sweet chocolate chunks - delicious...

second time I used crushed walnuts and white chocolate chunks... oh my -- yummy yummy  :)>>>

These were good, and I think my cookie exchange buddy liked them.  :) I used oats (and maybe less flour), and added chocolate chips instead of raisins (and nuts). I did add less baking powder, and smashed them down a bit, as suggested. They are very moist and cake-like, but I expected that after reading the reviews. A good pumpkin cookie.
