whole grain tortilla sandwich

What you need: 

3 tablespoons vegan butter (I use soy free Earth Balance)
1 large squash, sliced
dash salt
five sprinkles cracked pepper
1 tablespoon garlic powder
3/4 a medium sized sweet onion, sliced
2 whole grain tortillas (I use Ezekiel sprouted grain)
2 slices vegan cheese ( I used American style), divided

What you do: 

1. Saute the onion and squash separately using the vegan butter (I like to saute the veggies until they are almost burnt). Use the salt, pepper, and garlic for the squash.
2. Set the veggies aside and place one of the tortillas in the pan used to cook the squash. Spread 1 slice cheese around on the the tortilla (I pull it apart so it melts better). Place the veggies on top of the "cheese" covered tortilla.
3. Layer the other piece of "cheese" on top of the veggies. I cooked each side of the tortilla on medium high heat for about 2 1/2 minutes (this is just to melt the cheese and get the tortillas extra crispy).
Then enjoy your cheesy tortilla sammich! I found it to be pretty filling and tasty!
