Wild Curried Sweet Potato Fries with Cucumber Dip

What you need: 

4 Sweet Potatoes

3/4 cup oil

3 1/2 Tbsp. Curry Powder

2 Tbsp. Salt

1/2 Tbsp. Black Pepper

 

 

12 Oz. Vegan Sour Cream

1 1/2 Cucumbers

1 Tbsp. Minced Garlic

1/2 Tbsp. Lemon Juice

2 Tsp. Salt

3 Pinches of Dill

Hot sauce (if desired for dip)

 

Preheat Oven to 425 F.

What you do: 

This is a super yummy recipe I just came up with! The fries are great by themselves, and the dip pairs well with just about anything.

 

For Fries:

Preheat oven to 425 F.

Cut the sweet potatoes into wedges about 1'' diameter and 1/2'' thick.

In a mixing bowl combine the potatoes, oil, curry powder, salt and pepper. Make sure all of the wedges are well and evenly coated.

Lay the fries flat on a baking sheet (maybe two) and place in oven for about 30 minutes, or until brown and crispy.

 

For dip:

Blend cucumber, garlic, lemon juice, salt and dill in a blender until slightly chunky.

In a bowl, add the cucumber mixture to the sour cream.

If extra spice is wanted, add your favorite hot sauce!
