William's Happy Couscous
1 red bell pepper
1 green bell pepper
1 can of chopped tomatoes
1 cup couscous
1 vegetable oxo cube (vegetable stock)
2 tablespoon lemon juice
2 teaspoon sesame oil
Slice peppers into long strips and fry in sesame oil until tender. Chop tofu into squares (or crumble). Add tofu to pan and fry with peppers for approx 15 mins. Add can of tomatoes and simmer until desired consistency.
In separate bowl, mix couscous, lemon and vegetable stock with sufficient water to fluff couscous.
Serve couscous with tofu concoction on top! My 2 year old loves this!
