Winter Squash and Onion Fry

What you need: 

1-2 tablespoons olive oil
1 large red onion, thinly sliced
3-4 cups winter squash, thinly sliced
1/2 teaspoon powdered cumin
red pepper flakes, to taste
1/2 teaspoon thyme
1/2 teaspoon all purpose Indian seasoning (I use East End)
1 cup frozen corn, optional

What you do: 

1. Heat olive oil in a heavy skillet and sauté onion until it starts to color.
2. Add squash and seasonings and toss well for about 3 minutes.
3. Reduce heat, add corn if desired, and cover. Cook until squash is tender.
