World's Best Potato Salad (Brazilian version)

What you need: 

8-10 red potatoes, chopped
water
1/2 package 6 ounces) frozen mixed vegetables
1/2 tablespoon salt
1/4 tablespoon black pepper
lime juice, to taste
handful fresh cilantro
3 heaping tablespoons vegan mayonnaise (I use Vegenaise)

What you do: 

1. Put the potatoes in a large saucepan and fill 3/4 full with water. Boil the potatoes until tender (about 15 minutes). While the potatoes are boiling, heat the frozen mixed veggies in the microwave until defrosted (about 2 1/2-3 minutes depending on microwave temperature).
2. Drain the potatoes and add some salt and pepper to taste. Add salt and pepper to taste on the frozen veggies as well. Put the potatoes, veggies, cilantro and lime juice (to taste) in a mixing bowl.
3. Add the vegan mayo (make as creamy as you like!). Mix all the ingredients together. Serve immediately warm (delicious!!) or chill in the fridge for a couple of hours (also very tasty!!).
Source of recipe: This recipe is adapted from a potato salad that is frequently made in Brazilian cooking. It can be served warm or cold.
