York-A-Like Peppermint Patties

What you need: 

1/3 cup corn syrup
1/4 cup vegan margarine spread, softened (I use Earth Balance whipped)
1-1/2 teaspoons peppermint oil or extract, or to taste (I use more)
4-3/4 cups powdered sugar
1 (12-ounce) bag chocolate or carob chips

What you do: 

1. In a bowl, combine syrup, margarine, and peppermint; whip with an electric mixer. Add sugar by the cup while mixing. You should end up with a crumbly, sort of dry bowl of stuff.
2. Pick up a small handful of stuff and start to press it into shape. The size you want is up to you. They are so rich that smaller is better. This process is a lengthy one. It's easiest to use a cookie sheet covered with wax paper/plastic wrap to place them on.
3. Melt the chips until creamy and stir-able. Take it off the heat so it doesn't burn.
4. Coat the patties with the chocolate. This is the messy part and I haven't found an alternative way without special equipment. None the less a fun awesome recipe to do alone or with family.

SO HOW'D IT GO?

I substitued the corn syrup with rice syrup. 

Thank you for this, I don't like corn syrup so I was hoping someone would find an alternative! I assume you mean brown rice syrup?

This recipe already has a lot of great reviews, but I just have to add that YES, THESE ARE JUST AS GOOD AS EVERYONE IS SAYING! I haven't had a York in almost 10 years.
This is a laborious recipe, but it is so worth it if you love York style candies and you're vegan.
This might be the best veganized recipe I have ever had.

MVPru,  This is not nearly as labor intensive if you do them like I posted above in my 'Update' - in fact it makes them MUCH faster to do!!

It's been a long time since I had a York Peppermint Patty, but DAMN!!  These are phenomenal! I did add an extra 1/2 teaspoon of the mint extract.  I rolled the filling between two sheets of wax paper until about 1/4 - 3/8 inch thick and then cut them out with a 1.5 inch diameter shot glass. The dipping in chocolate was the hardest part for me. I haven't done it much and it's very messy.  The chocolate turns out a little thicker than I'd like but hey, it's not stopping me from eating them!!  ^-^ They are DELICIOUS!!!!

Update 3/10
I have found it to be much easier to spread melted chocolate on a piece of waxed paper and put the filling on it, then coat the top. After it cools and hardens, take a good sharp knife and cut the mints into approximately one inch squares. They are all uniform in size, show the layers, and it's much faster than dipping lots of circles in the chocolate. There's also the added bonus of eating the edges that I first cut off to square it up before making the little squares!!!

these were SO good!!!!! it definitely helped to refrigerate the peppermint mixture for a little while before coating it with the chocolate.  my family ate these up in 2 days, everyone loved them!! so simple and so delicious! :)>>>

i made these in several flavors for my fiance for Valentine's Day, and they were great!  as the recipe states, each batch makes A TON, so needless to say i had TONS of these!  i shared them with my non-vegan coworkers and they LOVED them!  i also doubled the extract amount to 3T which was perfect!  i made a batch with half cherry flavor and half almond extract mixed in and it was great!  also a batch with coconut flavor and topped with coconut flakes, yum!  

thanks for a great recipe!  i am going to make these for my wedding next summer!

;)b  AWESOME RECIPE!    In looking at the comments, I see a lot of complaining about "how hard" it is to coat the peppermint fillings with chocolate.  Nonsense!  Just refrigerate them for 20 mints, as suggested by an early reviewer, then place your peppermint disc in your melted chocolate, flip with a fork, remove onto wax paper:  done!    No tooth-picks or messiness.  Have fun!!!    I forwarded this recipe to every vegan I know.  Merry Christmas!!

oh and the way I coated them wasn't messy at all.  I melted the vegan chips in the micro in a mug and tossed each patty in and moved it around with a spoon then took it out with a fork and put it down on the tray

These were just awesome!  I only used 4 cups of icing sugar though, because I couldn't physically mix it any longer at that point (and 3 cups broke my mixer lol).  These were sooo good!
