Yummiest Veggie Soup Ever
1/2 kg tomatoes
1/4 kg carrots
1/4 kg snake gourd (if available - its of the gourd family, native to southeastern Asia and Australia but cultivated throughout the world)
1 tbsp olive oil
4-5 small pieces of garlic
couple of coriander leaves, shredded
1 green chili sliced thru middle
herbs such as basil, oregano etc
Cut tomatoes, carrots, beetroot & snake gourd into pieces & dump into cooker or pan with 6 large cups of water. After it is cooked, blend in blender but do not strain.
Heat oil in large saucepan. First put pounded garlic in it & stir. After garlic starts to burn just a little, pour the blended soup in it.
After it reaches boiling point, throw in the herbs & shredded coriander....& boil again for a minute.
Soups ready .... & serve as you please with dollops of peanut butter or as your family likes it.
This soup is superbly easy as well as superbly nutritious. I have a little girl at home & on days she is not ready to eat, I substitute her whole meal with this soup as it is equally nutritious!!!! Go ahead now & try this !!!
