Yummy French Onion Soup

What you need: 

4 large sweet onions (or just regular onions), sliced 2 tablespoons margarine 1 teaspoon sugar 1 teaspoon salt 1 teaspoon dried thyme 1/2 tablespoon dried mustard 2-3 tablespoons soy sauce 1/4 cup red wine ( I used Cabernet) 6 cups veggie stock (use a good one!) pepper, to taste

What you do: 

1. Heat margarine in large stockpot over medium heat. Add onions, sugar, and salt. Cook for 1 hour (yes, 1 hour!), stirring frequently. 2. Add thyme, mustard, soy sauce, vegan wine, pepper, and a little more salt. Let vegan wine cook down for a few minutes. 3. Add veggie broth, bring just to a boil, and...its done! Serve with warm vegan french bread.'

I was in the mood for French onion soup tonight, and so I scoured the web for a vegan recipe. Because there were so many good reviews on this recipe, I decided to go with this one.

I halved the recipe, as I was the only one eating it, and the only other thing I changed was using white wine instead of red, and I cut back the salt. Even when I did cut back the salt, it was a tad bit on the salty side, so the next time I might use a low sodium veg stock.

I also didn't cook the onions for an hour, as I was incredibly impatient. I might have cooked it for 20 minutes, and it was fine.

There were dried croutons left over from Christmas stuffing, so I topped the soup with that, and some nutritional yeast flakes.

All in all, this was an amazing recipe and I am sharing it with all my vegan and non vegan friends.

I use 4 large brown onions and caramelise for as long as I can wait in vegan margarine with a little garlic, then add vegan beef stock and add a bit of yummy wholegrain mustard. It's so addictive... A tip, toast some bread and melt some vegan (I use homemade) cheese on top, and float on the soup. Mmmm

Can't believe I somehow didn't have this reviewed/take pics or even put it  in my VW  recipe box... it was totally totally amazing! Def one of my fave soups to make, and I'm a certified soupaholic here.

yummy!i'd never actually had non-vegan onion soup before -- or any onion soup. i made it while watching dr. who so i was kinda distracted, but it turned out great anyhow. this was really great -- i think i made it right but it still tasted great. i used balsamic vinegar instead of wine cos i don't drink so that might have changed it a bit.

I made this for dinner last night and it was fabulous!  It is totally worth the wait to cook the onions for the full hour.  Also, this is a soup that definitely benefits from homemaking your own dark, rich stock.

Wow, I've been away from vegweb for a long time, and it's nice to come back and find so many great reviews of my  recipe!  And photos too!  I'm so glad everyone's been enjoying the soup for the last 6 years!!  I think I'll have to make it again soon!  Haven't made it myself in a long time...

This soup is like sex, seriously. Everyone must try this!!! I didn't use any wine both the times I've made this and I put a little bit of garlic in, but it tastes just how I remember French onion soup tasting. I also used a bit of Dijon mustard too.
