Yummy Mock Chicken Salad

What you need: 

1 (15 ounce) can chickpeas
1 green pepper or celery, diced
1/2 onion, diced
1/2 cup vegan mayonnaise or ranch dressing (I use Nayonaise)
salt and pepper, to taste

What you do: 

1. Pour the chickpeas in a medium bowl, and mash with a potato masher until chunky.
2. Toss in green pepper, onion, dressing and seasoning and stir.
3. You can serve it by itself, in a wrap, or on a sandwich with a big fat slice of tomato.
Delicious! I have served this to plenty of meat eaters and they love it!

SO HOW'D IT GO?

I usually add some seaweed to this and it's soooooo tasty!! I guess that would make it closer to a "tuna" salad but meh. I've also been known to use seaweed aus a wrap (you know? The sushi sheets) instead of a regular flour wrap. Yum!!

this was so super yummy!!  :smileside:    we also ate them as sandwiches & they were awesome! next time we're going to try it with a little bit of relish for that extra umph!  ;)b

I don't really know what chicken salad tastes like but this was soooooo good! I added onion and garlic powder, a squirt of lemon juice, and a squirt of dijon...So simple and delicious on a pita, also on plain on lettuce ;D

just made this for a quick snack... was awesome... and it did kind of remind me of chicken salad. 5 stars

I really love this recipe.  I added to the original recipe 1/2 chopped celery stalk, 1/2 tea spoon paprika, and 2 cloves of minced garlic.  I also used just 1/2 of the green pepper.

I like this salad on a crusty bread or in a sun-dried tomato wrap.

Excellent! I crave and miss chicken salad with pita chips on regular basis, and although I was skeptical, this totally hit the spot. Quick, simple, and very good! Thanks for the recipe!

I have been vegan for almost six years and have never eaten chickpeas.  So I wanted to try this so I could see what they taste .  This was good. I sauted my red onions and green peppers and threw the can of beans into there as well.  I seasoned with vegesal, garlic powder, onion powder and black pepper.  I also added mustard and relish to eat.  I ate it on crakers and bread and like it both ways.  This is the best salad i have had yet since im not a fan of tofu or tvp.  I will be making this weekly because Im trying to eat beans at least 3x's a day.  Thanks I love it!!!!

I made a few typos-I wantd to see what they taste like.  and I dont know why i typed to eat after mustard and relish thats what i was ready to do I guess lol.  I ate this entire serving myself thats how good it is and cant wait to make it again it is really good to be so simple.
