Yummy Mock Chicken Salad

What you need: 

1 (15 ounce) can chickpeas
1 green pepper or celery, diced
1/2 onion, diced
1/2 cup vegan mayonnaise or ranch dressing (I use Nayonaise)
salt and pepper, to taste

What you do: 

1. Pour the chickpeas in a medium bowl, and mash with a potato masher until chunky.
2. Toss in green pepper, onion, dressing and seasoning and stir.
3. You can serve it by itself, in a wrap, or on a sandwich with a big fat slice of tomato.
Delicious! I have served this to plenty of meat eaters and they love it!

Very yummy! I added raisins into mine for a sweet contrast point. :)

So yummy, so simple!  What a great recipe.  I chopped up some celery, red bell pepper, scallion, and garlic to throw in it as well, along with a teaspoon or so of apple cider vinegar and some curry power and yellow mustard.  I found I didn't need very much vegenaise either because the chickpeas are moist, which I like, as that was one of my complaints with actual chicken or tuna salad, how much it tasted of mayo.

My toddler didn't go for it really, but I think that had more to do with holding out for the Goddess Bars chilling in the fridge than not liking the recipe.  My man and I grubbed it up in tortillas and on hemp bread with sprouts, lettuce and a little more mustard (we really like mustard).  Definitely will become a weekly staple at our house.  Thanks!

Pretty darn good.  ;)b  I think you should call this recipe Mock Tuna Salad because the chickpeas has a fishy smell to them which I never really noticed before.

I used one-third of a celery stalk instead of the green pepper. I also used Vegenaise since it taste much better than Nasoyannaise. I ate the whole thing with low-carb fiber crackers.

so SO good. i added some mustard, dill and tumeric to mine and it was delicious. and super easy. just the way i like it.

This is very tasty and would go well in sandwiches or wraps, but I wouldnt say it tastes like chicken salad because it doesn't. Not at all. But it is good.

easy..delicious...great recipe.  I opted for celery over peppers, omitted the onion and added a bit of sweet relish.  I also used Veg-e-Sal in lieu of salt.  This is one of those great finds.  Very affordable and a snap to whip up.  Thanks!

I was verrry skeptical of this recipe because I'm not really a fan of chickpeas. But it's delish!! I added red peppers and celery and just a little bit of garlic powder. Yummo! Will be lunch for the next few days and definitely thereafter! Thank you so much!

I have to say that I was hesitant also about it tasting like real chicken salad, but it does!!!  I made it like I have in the past using celery and tossing in some red grapes, raisins, curry and/or apple.  Sometimes I'd prob drizzle a bit of raw agave in, depending on what I have on hand in the fruit dept.  Its awesome.  Now I won't have to miss the real thing anymore!  Even hubby likes it a lot.

This is one of my all time favorite 'go-to's'.  I make it whenever I am in too much of a hurry or when I am just feeling too lazy to cook.  I switch the seasonings and added veggies around alot...it all depends on what I have on hand.  I like to make a little extra too, to I can have some the next day because I think it tastes better after it sits a bit.
