Yummy Mock Chicken Salad

What you need: 

1 (15 ounce) can chickpeas
1 green pepper or celery, diced
1/2 onion, diced
1/2 cup vegan mayonnaise or ranch dressing (I use Nayonaise)
salt and pepper, to taste

What you do: 

1. Pour the chickpeas in a medium bowl, and mash with a potato masher until chunky.
2. Toss in green pepper, onion, dressing and seasoning and stir.
3. You can serve it by itself, in a wrap, or on a sandwich with a big fat slice of tomato.
Delicious! I have served this to plenty of meat eaters and they love it!

YUM!  I added tarragon to make it taste more like chicken salad and it was fantastic.

Wow, this  was great!!  I've been doing a lot of beans and greens and this kicked things up a notch!  So easy and so yummy.  I used the dijon nayonnaise, put it in a whole wheat and flax tortilla with romaine lettuce, slices of onion and tomato, and my favorite Frontier veggie pepper.  I had to have seconds!!!  Can't wait to try other variations. :D

Holy moly this was good.  I changed it up to imitate the tuna salad sammiches I grew up on as a kid.  I only used 1/4 cup Vegenaise to save calories, subbed lots of chopped celery for the bell pepper and used green onion instead of white.  It tasted surprisingly similar to tuna, though better.  (I don't think I've ever eaten chicken salad, so I can't say how it compares).  In my 20 years of being vegetarian, I never had the desire to attempt the chickpea-tuna-salad idea, but I'm soooo glad I tried this recipe (thanks to all the great reviews and pictures!)

This is actually a modified recipe for Mock Tuna Salad.  I never liked Tuna, so I always called it Chicken Salad.  And I'm not a big fan of celery, which is why I use green peppers.  I'm so glad everyone is enjoying it and offering so many great variations!  There is so much you can do with it and it's so easy and delicious!

i've made something like this but thought it more closely resembled tuna salad - perhaps the green pepper's essential for it to be reminiscent of chicken.

This has definitely become a staple! I add celery all the time, I've never tried green peppers. Usually add a bit of salt-free spike. My main point in writing yet another review is that I really think it should be refrigerated at least a few hours before eating. It's much better cold, but more importantly, it gives the flavors time to meld and is a THOUSAND times less bland thereafter. Very good! Thanks again!

this makes such a good lunch. i added some cayenne pepper and a dash of brags, scooped it on some whole wheat bread and added a slice of juicy tomato. i think i will be making this often as it is simple and cheap to make, and a good, filling, yet light lunch.

This sandwich had a nice texture, but it was very bland.  I would like to make it again and use a chicken flavor seasoning.

And by slide, I mean slice. Forgot to mention, I also used only one slice of onion as uncooked onion makes me dizzy(no idea) and very little salt. Next time I might try adding a bit of mustard.

I made this just now for my daughter and I. I don't know that it tasted anything like chicken salad, but it was really good! Especially good for the amount of effort put in. I used fat free nayonaise, celery, and garlic powder, with lots of pepper and served it on a hot dog bun with a slide of vegan cheese. Will definitely be making this again soon.
