Yummy Parsnip Pancakes

What you need: 

3 to 5 good size parsnips

1/2 cup chopped red onion

1/4 cup soy flour (I use Bob's Red Mill)

1 egg replacer (I use Ener-G...1 1/2 tsp replacer and 2 TBLS water)

Parsley flakes or whatever you like for spice

Salt/Pepper to taste

Olive oil (how ever much you like to fry in...Olive oil spray can be  substituted as well)

 

What you do: 

Wash, peel, and cut up parsnips. Boil parsnips until nice and tender (about 40 minutes-the more tender the better for mashing). When parsnips are ready, drain and mash with a potato masher until no chuncks remain. Add chopped onion, egg replacer, soy flour, salt, pepper and parsley.  Make into small patties and fry on hot skillet or pan in olive oil until  golden brown on each side. These are good hot or cold and smeared with Earth Balance!
