Yummy Soymilk Chai

What you need: 

4 cups filtered water
2 tablespoon loose leaf tea (earl grey/orange pekoe etc.)or tea bags
1 cinnamon stick or powder to taste- a little goes a long way
4 cardamom pods, lightly crushed to break pod
4 thin slices peeled, fresh ginger (or dash powdered)
7 or 8 black, pink or white peppercorns
Sweetener ( sugar or succane)to taste
Fennel seed (optional for those who like a licorice taste)
1 cup soya milk or less or more to taste

What you do: 

Boil water in a saucepan. Add spices and simmer 5 to 6 minutes. Add tea and steep for 1 to 2 minutes. Strain. Heat soymilk separately but do not boil. Sweeten soymilk to taste. Add strained tea to soymilk. Stir and serve in warm cups. Drink and enjoy.
Use your imagination with the spices and the tea. Different combinations yeild different taste sensations. Treat yourself and use fresh ginger rather than the powdered - It adds a freshness that is really delightful.
