Yummy Tofu Scramble

What you need: 

1 block extra firm tofu
3 cups spinach, chopped
1 red pepper, chopped
1 Spanish onion, chopped
3 cloves garlic, chopped
1 tablespoon turmeric (or more if you think you need it)
1 teaspoon red curry powder (or more if that's how you like it)
1 teaspoon cumin (of course, or more, if you like that)
olive oil
salt and pepper to taste

What you do: 

In a large frying pan/stir fry pan, brown garlic and onion in oil, on low heat. Then add red pepper. Cover and let sit, stir it around every now and then.
Dry out tofu as much as possible, and then crumble in a bowl. Add the turmeric and stir it around until well mixed. Add tofu/turmeric to pan, add the rest of the spices. Mix well.
Allow to cook until everything is warm, continue to stir and add in spinach. When the spinach has cooked down, you're ready go to!
Salt and pepper to taste, and feel free to ad soy sauce and/or hot sauce! Delicious with or on its own!

SO HOW'D IT GO?

I cut the recipe in half (about) & found that there was too much spinach for my liking. I also crumbled the tofu too much, but that was my fault. I think next time I'll half the spinach (after halving the recipe), add then add some tomato & nutritional yeast flakes like the last poster suggested.

I'm also not sure what the serving size is meant to be, but halved it was definitely more than two in my opinion... just a heads up for vegans cooking for themselves/two.

I served this on a buttered (earth balance) bagel with some salt & pepper. Very good! I just still need to play around with the recipe a little more.

Pretty yummy, I just added a little nutritional yeast and some tomato and loved this!
