SO HOW'D IT GO?

This is a great recipe! I added vanilla essence (just a bit) and cinnamon because I love it  :)
I halved the recipe and instead of halving the water I added the same amount of water and it worked fine, because when I had only half a cup it wasnt enough and the pancakes were kind of lumpy.
I made about 4 pancakes and they were almost the size of a dessert plate each, which is perfect I ate them in 2 seconds and now my plate is empty =(
I am definitely eating them again tomorrow! It is so fast and easy to make!
Thanks for sharing this recipe! I ate it with maple syrup and bananas.

I really like this recipe, I top it with blueberries. Only question, recipe says, "Serves 10". At my house, at best it only serves 3. Are we over eating?

Hello all.. when I made them, they came out a bit chewy... any thoughts on what I may have done for this result? Thanks..

Overmixed them, perhaps?  Pancakes should be stirred just enough to get the dry ingredients wet.  If you stir too much, you develop the gluten and they get chewy.

These were great! I was in a bit of a pinch not having any soy milk so I was really happy when I found this pancake recipe didn't call for any! They were a bit tricky to flip but that probably was thanks me me making them too big. Take note that the batter enlarges quite a bit once it hits heat.

i used a mixture of whole wheat, whole wheat pastry, and organic white flour for this, and let the mixture sit for a half hour before making, and they turned out to be the fluffiest pancakes i think i've ever had, vegan or not. very very good.

One more change I made to make it just as healthy...used applesauce instead of oil.
