Yumtastic Refried Beans

What you need: 

2 (15 ounce) cans beans (any variety)
1/2 cup veggie stock
3-4 cloves garlic, minced
1/2 cup cilantro, chopped
1 teaspoon cumin
1/4 teaspoon chilli pepper
1 ripe tomato, sliced

What you do: 

1. In a medium pot, cook all ingredients for 10-15 minutes, stirring occasionally.
2. Remove from head and mash with a fork. Great over rice or with burritos and guacamole.
Enjoy!!

SO HOW'D IT GO?

These were heavenly! Just used them in a burrito : ) I am slowly returning to veganism after a 4-year "relapse." It's wonderful that simple recipes such as this can be so delicious. Thank you, gesita, for posting this one!

This was so easy to make and tasted great. I actually added chili powder instead of chili pepper. I added some lime juice. And I did one can black beans, one can of pintos. Put these in a tortilla with some fajita veggies, salsa and guacamole! Next time I think I'll add a diced jalapeno. Great recipe, thanks!

This is a good recipe. I made it last night at my friends house since we went on a cooking spree and she mostly had pantry items (baking supplies, beans, pasta, etc.) but i changed a few things. We used 2 cans of pintos, 1/2 cup of water (no stock), 2 cloves of garlic, didn't have any cilantro so we left it out and added a bit of dried oregano, added one chopped chipotle pepper and a little of the juice for the chili, and smoked paprika. we had it with brown rice and it was awesome.

These were great. I used kidney beans because I had them and my bf doesn't usually like them so I decided this recipe would work well to disguise them. He said he totally wouldn't have known, so I'd consider that a success. Definitely yumtastic.

These turned out delicious and was very fast and easy to make.......has a nice, fresh flavor. My husband isn't crazy about refried beans, and he actually liked these... kids liked them too! MUCH MUCH better than the canned ones, and not much more complicated. Definitely will be making again!

I had refried beans on a vegan pizza from a store a little while back for the first time (its not really a very common food in New Zealand), and looooved them so i wanted to make my own for a homemade pizza and this gave me a good guide to make my own, as i had to subsitute some of the ingredients for similar ones. Very yum and made my pizza so good!!
