Zeke's EZ Veggieburgers

What you need: 

4 cups cooked, sticky short grain brown rice
1 (15 ounce) can cooked pinto beans
2 cups cooked lentils
1 teaspoon freshly ground black pepper
4 tablespoons fresh parsley flakes
6 cloves garlic, finely chopped

What you do: 

1. To make rice sticky, steam according to package directions for 10 minutes, then stop, let sit for 20 minutes. Steam again for the full, usual time (as if you hadn't pre steamed it). My steamer takes 60 minutes after first doing the 10 minute steaming. This will over-steam the rice, to come out sticky.
2. Preheat broiler. In large bowl, thoroughly mash rice/beans/lentils. Add pepper. Thoroughly stir in parsley and garlic.
3. With clean hands, make 10-12 burger patties. Broil patties until done on each side (about 10 minutes per side).
Refrigerate or freeze if not cooking the patties immediately. I like to store them by wrapping (and separating) two burgers each in wax paper, enclosing them in a zip-lock bag.
Use quality whole grain buns and favorite condiments (lettuce, onion, avocado, relish, ketchup, mustard, etc.). The patties tend to squoosh when pressed, so consider it more like a vegan "sloppy joe". Juicy and bursting with flavors, you'll need extra napkins.
Variation (Zeke's EZ Gardenburgers): Replace lentils with same quantity split peas. Replace parsley flakes with same amount chopped basil. Replace garlic with same amount shallots. Replace black pepper with twice the amount paprika. Heavenly!
