Zucchini Bake
What you need:
1 cup baking mix (Bisquick, but check ingredients)
1/2 cup onion, chopped
1/2 teaspoon salt
1/2 cup vegan parmesan cheese
2 tablespoons parsley
1/2 teaspoon seasoned salt
1/2 teaspoon oregano
dash pepper
4 egg replacers (http://vegweb.com/index.php?topic=7678.0)
1/2 cup vegetable oil
1 clove garlic, minced
3 cups zucchini, thinly sliced
What you do:
1. Preheat oven to 350 degrees F, and grease a 9x13" baking pan.
2. Combine all ingredients except zucchini. Add zucchini slices.
3. Bake for 25 minutes. Cut into squares and serve with salsa.

SO HOW'D IT GO?
I just decided that it tastes like a baked veggie omelette. Nice.
So I really like the idea of this recipe, but I screwed it up majorly. I omitted the oil, and added soymilk instead, and then I forgot about the egg replacers and thought the batter looked too dry. So then I added the egg replacers. And it was a big wet mess. It took about an hour and a half to cook. Because I put it in a smaller pan. I wish my computer hadn't died in the middle of making this.
I will try it again. Because the flavor was really good.
