Zucchini Surprise

What you need: 

1 clove garlic, minced
1 stalk celery, optional
1-2 scallions, optional
2 medium zucchini, chopped
2 tablespoons olive oil
1/4 cup white wine, optional
1/3 cup balsamic vinegar
1 package (8-9 ounce) tortellini or small ravioli
fresh basil, chopped, to taste

What you do: 

1. Start boiling water for pasta. In a frying pan, saute garlic, celery and scallions, if using in olive oil, then add the zucchini. Stir frequently.
2. When zucchini looks like it's getting soft, add vegan white wine, if using, and balsamic vinegar. Lower heat and let sit to absorb the flavors; stir occasionally.
3. Add pasta to boiling water. When done, drain and add to simmering zucchini pan. Stir and serve hot or cold or let simmer for a while longer.
4. Garnish with fresh basil.

SO HOW'D IT GO?

Really good~!  I did it without pasta, instead used millet bread to soak up excess vinegar.  Hope it's as good tomorrow, maybe cold~!

MmmMMMM this turned out great.I was afraid the balsamic was going to be too strong but once it simmered for a bit it was mellow and sooo flavorful.

I highly recommend adding crimini mushrooms..or any mushrooms really. Delishhhh.

I didn't see where to add the basil either, so I added it to the zucchini as suggested somewhere up there. 

A yummy, simple recipe.

This recipe didn't work out for me.  The taste of the vinegar was really overwhelming, and is still llingering 20 minutes later.  Balsamic is pretty strong.  Absent the vinegar, it would have been bland.  I followed the recipe exactly, without the optionals.

Delicious!  The flavor was even better after sitting the fridge for leftovers the next night!!  I served it with macaroni, but I think that angel hair pasta would work better as it is a bit dry and there is not really a sauce to hold the noodles together.  I would like to play around with it a bit next time, maybe adding a bit more liquid.  Thanks for sharing!

this is just like a sauce i make- but i add simmered carrots and cayenne. its really good.

this was FANTASTIC!  my wife just told me that this is one of her new favorite dishes and that she's going to ask me to make it for her all of the time.  ;)b

i followed the recipe (but i didn't try any of the optional stuff yet) and i added mushrooms and sliced black olives.  we served it with whole wheat penne pasta after we mixed in the pasta and let it cook in the juices of the veggies & vinegar for a few minutes.

the only thing is that the recipe doesn't say when to add the basil.  i added it with the veggies, but i don't know when the author intended.

this was quite yum!
