I made this for my boyfriend the first week he went vegan and he loved it! The pineapple with the peppers and the cheesy mashed potatoes gives it a very unique flavor.

I made this cake replacing the flour with rice flour and adding 2 tsp xthane gum. It is AMAZING! Yum!! :-)
