Wow! This is amazing! I had never thought of using beans to make "quesadillas." I left out the liquid smoke and it was still awesome! I added a chili pepper. Will definitely make this again!
This is so good! I had a little trouble blending it, but that was probably because I was impatient and didn't cook the carrots and celery long enough. But I like the little chunks anyway!
