Avocado Chickpea Sammy

Servings: 
you'll have enough chickpea and avocado paste for at least 3 sandwhiches
Ingredients: 
  • -1/2 can of chickpeas
  • -1 avocado
  • -1 lime
  • -salt to taste
  • -tomato
  • -bun
  • -lettuce/kale/spinach
Directions: 

1. Rinse the chickpeas
2.Put them in a bowl and add the pitted and pealed avocado in with them.
3. Mash the two together until finely pasted. (You can do this on pulse in a food processor)
4. Add lime juice, and salt to taste.
5. Spread on a toasted (optional) bun, with some tomato slices and lettuce/kale or spinach.
