Curry Fried Cous Cous

Ingredients: 

1 package cous cous

1 Tbsp. curry powerd

1 tsp. vindaloo

1 tsp. tumeric 

1 Tbsp. vegetable oil or vegan margerine

1 large onion (diced)

1 pound tofu in small cubes

2 cups or 1 bag of frozen peas and carrots or mixed vegetables

salt and pepper to taste

 

Directions: 

Cook cous cous according to instructions, but add in the curry powder.

Will that is cooking, sautee the onion in the oil/margerine until translucent. Add the tofu and sautee a couple more minutes. Next add the vindaloo and tumeric and then the veggies. After cooking a few more minutes fold in the cous cous and then salt and pepper to taste.
