Curry Spinach

Ingredients: 

1 1/2 tablespoons olive oil
1 medium onion
1/2 cup water
2 to 4 tablespoon mild or hot curry paste
1 potato, diced
1 tomato, diced
1 (10 ounce) package frozen chopped spinach

Directions: 

1. Saute onion in olive oil.
2. Add curry and water and simmer for 10 to 12 minutes.
3. Add remaining ingredients and cook until potato is tender. Serve over rice.
