Papaya Mint Smoothie

Ingredients: 

1 large papaya - peeled, seeded and cut in cubes
4 cups of soy milk, or milk alternative
3 Tablespoons of sweetener of your choice
1 inch knob of fresh ginger root -peeled and minced
1/4 cup of fresh mint leaves

Directions: 

Put Papaya, ginger and liquid into blender. Puree for about a minute, then add sweetener and mint. Blend for another minute.
Serve in big glasses, you can garnish with some fresh mint sprigs.
This is the best smoothie around! Zesty and yummy.
