Apple Crunch

Ingredients: 

5 large sour apples
1 cup of rice flour
1 cup brown sugar
1 stick of vegan margarine
1/4 teaspoon salt
1 teaspoon vanilla

Directions: 

Peel and pare apples into small casserole dish. Mix rest of ingredients and spread over apples. Bake one hour in 350 F oven. Serve warm.
They are great as breakfast the next morning.
