Mango Gazpacho

Ingredients: 

3 mangoes, cubed or however you can get them off the seed
2 cups mango nectar
1 1/2 cups coconut milk
2 tablespoons lime juice
3 tablespoons minced fresh ginger
1/4 cup brown sugar

Directions: 

A crowd-pleasing soup that tastes like dessert!
Put mango pulp, nectar, and 1/2 cup coconut milk in blender and puree. Add remaining ingredients and puree again until smooth. Chill one hour.
This goes great with bean burgers or chickpea steaks.
