3 servings of your favorite vegan tortilla chips
1 can seasoned black beans (slightly mashed)
1/2 cup Dragonfly's bulk dry uncheese mix
3/4 cup water
1/2 cup salsa
1/4 cup chopped onion
1/4 cup chopped green onion
1 diced tomato
chopped jalapeno to taste
4 tablespoons vegan sour cream (Tofutti)
handful chives
sprinkle of cilantro (optional)
This is quick, delicious and perfect for Game day or Movie night!
Preheat oven to 350 degrees Fahrenheit. In a small sauce pan mix dry uncheese with the water and stir over med heat until thick. Meanwhile, layer tortilla chips in an oven safe pan and spread black beans evenly over them. When cheese sauce is thick, add salsa and stir. Pour cheese and salsa mixture over chips and sprinkle onions and tomatoes on top.
Bake for 10-15 minutes just until cheese looks bubbly. Take out of oven and top with sour cream,chives, green onions jalapenos, and cilantro then enjoy!
