1/2 cup soymilk
1/2 teaspoon vinegar
1 cup flour
1/3 cup cocoa powder
1/4 cup sugar
1/4 cup brown sugar
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup applesauce
1 teaspoon vanilla extract
1) Preheat oven to 350 degrees Fahrenheit. Add soymilk and vinegar to a bowl and let sit five minutes to curdle.
2) In a large mixing bowl, sift in flour, cocoa powder, sugars, baking powder, baking soda and salt. Then add the applesauce, curdled soymilk, and vanilla. Mix until batter is smooth.
3) Pour batter into prepared baking pan and bake for about 30 minutes or until the toothpick comes out clean when you check. Let cool for 10 to 20 minutes and serve as pleased.
