Chocolate Fudge

What you need: 

2 1/2 cups unpacked brown sugar (maybe less)
4 oz unsweetened chocolate (maybe more)
1/4 teaspoon salt
2 tablespoons light corn syrup
3/4 cup very vanilla soy milk
1 tablespoon margarine (Earth Balance brand recommended)
1 teaspoon pure vanilla extract

What you do: 

Put everything EXCEPT vanilla AND margarine in a pot.
Heat on stove for a while, keep a cup of cold water near by, it will start bubbling.
When you think its ready put a drop of it in to the glass of cold water. If the drop of fudge diffuses or falls apart then it has to be on longer.
If the drop of fudge forms a little ball then it has been on long enough.
Add margarine to fudge and finally the vanilla.
Stir a lot while its cooling down, the more its stirred the less crystallization in the final product and the more creamy it will taste. I usually pour it in a large cake pan and keep spreading it out until cool enough to be thick.
Then pour it in to a container and put it in the fridge uncovered to cool down and developed a shell.

SO HOW'D IT GO?

added mint extract to mine and white sugar but delicious! just like my old non vegan recipe.

I use brown rice syrup in place of corn syrup with great results everytime!
