Date a Currant Muffins

What you need: 

1 cup whole wheat flour
1 cup all-bran cereal, crumbled
1/4 cup flax seeds
1/2 cup dried currants
12 dates, chopped
1/2 cup plain unsweetened applesauce
3/4 cup soy milk, I like vanilla
1 teaspoon baking powder

What you do: 

Combine all ingredients in large bowl. Spoon into cooking-sprayed muffin pans. Bake for about 20 minutes or until it survives the Toothpick Test.
Nutrition Information: About 202.35 calories per muffin, but its worth it. They are very high in fiber and low in saturated fats. Enjoy.

SO HOW'D IT GO?

yep they are great.. the flax seed gives them a fantastic nutty flavor.. i always think flaxseeds taste like walnuts.. the muffins are good stuff.. and very moist!

I sorta bastardized this recipe to use what i had available.. they are currently cooking in a 350F oven.. Im guessing 350 for the temp cuz it doesnt specify in the recipe, and 350 is usully a good guess to go with for baking muffins..

but, i used this recipe for basically measurements and i tried to use similar ingredients to the ones i changed..

i used oats instead of crushed bran cereal
i used a mashed banana mixed w/ 3 tbsp coconut oil for the applesauce (banana and applesauce are usually an egg replacer, but sometimes theyre an oil replacer, so i just compromised)
and i didnt have dates, so i added 1/4 cup sugar for the sugar that would have been from the dates, and doubled the currants

the batter tastes super good and they smell wonderful, so i'm sure they will be great.. next time i get proper ingredients i will make this right and see how it turns out :)
