Dessert Ideas

I have a project for a class that I need to have 3 dessert items.  They have to be more then just a cookie on a plate or a piece of cake but I am drawing a blank.  My theme ideas were breakfast for dessert or peanuts/peanut butter.  For the dessert option, I was thinking of doing a peanut doughnut with some type of sauce and "cream", the grapefruit sorbet in grapefruit shells from vegweb, and something with coffee.  For the peanut idea I was thinking of doing a peanut butter cup mousse, peanut doughnut (maybe), and some kind of peanut butter sandwich (maybe out of a krispie treat).

Does anyone have any other ideas?  I have to be able to find recipes for them as well.

I like your ideas! Are the desserts supposed to go together? I like the breakfast concept because you can do so many creative things with that, but the peanut desserts sound even yummier to me. Another idea would be to do seasonal desserts. I guess it's a little early for summer fruits, but we're getting tons of strawberries here now, so I've got strawberry shortcake on my mind... For the breakfast idea you could do crepes...filled with fruit, drizzled with chocolate, whatever. :) Or maybe something with oats, like a crumble or something.

What about ice cream sandwiches using peanut butter cookies?  Or cookie dough ice cream with peanut butter cookie dough?  (I don't know why I'm thinking of ice cream ideas...it's freezing today).  Peanut butter brownies?  Peanut butter fudge?  Peanut brittle?

What about a rich chocolate brownie with cashew-thyme-cream, bergamot olive oil and sea salt?

Coconut-mango cornbread topped with lime sorbet and strawberry-ancho chile sauce?

I don't know, just be creative and think outside of the box. Deconstruct a classic and make it exciting and new!
