Fresh Pumpkin Troubles

Hey. So I just got some local pie pumpkins (the little kind) from the farmers market. When I was taking the seeds and string out, it seemed a little bit harder than usuall... but then again I only do things with them once a year, so I cooked them (at 350 for about an hour) and then hollowed them out and blended the insides, but it tastes really wierd. I've worked with fresh pumkin once before, doing the exact same thing, and it didn't taste like this. Kinda bland... idk. It tastes like I think a pumpking that isn't ripe would... is that it? You know of any other reason? And, more importantly, what I should do with it? (Can it be fixed, how can it be fixed...) Thanks.

Okay this probably won't work.... but since no one else has posted...
I'd say store it with apples (or another ethylene gas producer) if it were still whole... but it's not... but that doesn't mean you couldn't still put it with apples... or even add apple sauce to it????? I have no idea.... Just throwing stuff out there...
Were you planning on making pie with them? Or something else?
