Please help me use up Ingredient X.

Ahoy folks! I thought I'd start a thread where you can ask for recipes and advice on how to use up an ingredient (e.g. a vegetable, fruit, grain, bean, etc.) of which you have lots and lots and lots; or which is new to you and you don't know where to start with it.

I'll go first. :P I have many, many tasty carrots from the farmers' market which I need to use before they go soft.

Recipes, please.

I know, I know, carrots - simple - should be a no-brainer... but I was not fond of them for a long time, simply because I'd never known anything but raw or steamed carrots with very little flavour. I like to do INTERESTING things with them. They're so adaptable! Gimme your adaptations! :D

If you make herbed vinegars.  It is great with rice vinegar and then used as a vinegar/oil salad dressing.

I just posted about this in aimless chat, but does anyone have a favorite corn bread/muffin recipe? I have some fresh cranberries to use and figured they'd go well in something like that but I haven't made cornbread in years, so idk which to use. Thanks!

This one is so easy and really does turn out well. I like that it isn't too sweet and is plenty moist as well. It's been my go-to.

Probably.  I've seen them used in Asian style recipes too, stir fries and whatnot.

I really love this cornbread recipe. It won the Blue Ribbon in the Iowa State Fair.

Cream of wheat = semolina.  So...

Broa (Portuguese bread) http://www.sbs.com.au/food/foodsafarirecipe/index/id/20/n/Corn_bread_(broa) (scale the recipe waaayyy down.  I make like 1/6 of that recipe) or semolina pudding (sometimes called semolina halva/halava/halwa, etc).

Thanks Saskia! I ended up using the sunny corn muffin recipe from VWAV since it was for thanksgiving, but I bookmarked the Dana Sly one!

Rice-fu. Seriously. Like tofu but made from rice, so they tell me. Google it. There's a blog out there called "The Republic of Bunny" and she even has a tutorial on how to make it. She had a video on YouTube, it might still be there.

what if i don't have rye flour? could i sub with whole wheat or regular wheat?

Hmm, I've never tried subbing something for the rye flour, but I think whole wheat flour would work.

Btw, my favorite thing to do with broa is this: http://www.sbs.com.au/food/foodsafarirecipe/index/id/21/n/Migas (yes, I make bread just to crumble it up). I don't use as much oil, but I use way more garlic and thinly slice it so it turns into garlic chips (which I don't remove), and I skip the pine nuts because I never have any.  SO. GOOD.

I got given 20 coconuts (yay for volunteering and the random thank-you's) i gave away 8.then we opened one and drank the juice, and ate quite a bit of the meat, then put the rest in the food proccesser and toasted it in the oven. I would love to do something creative with 11 remaining ones. i was thinking maccaroons or something... ideas?

can you can the juice for future use? like coconut milk? then dry the meat for the flake usage?

curry, ice cream, maybe a thai soup... i tried making the macaroon recipe on this site (well this was when i first went vegan) and it was an epic fail :/

I thought cream of wheat was farina. same thing?

Farina is a finer grind than semolina. Kind of like the difference between grits and corn meal.

Help! I have 2 big bunches of white celery in the house. It takes me about 10 days to use one bunch in soups etc. and in a fit of absent-mindedness I bought another one. What can I do with it? Something cooked, please, it's COLD here.
