Summertime Barley?

Hey everyone!

I have a ton of barley, leftover from (one of my many) winter crockpot chili recipes. Problem is, it is too hot here for this recipe, and for nearly every other barley recipe on here (soups, stews, etc.)

I'd rather use what's in the kitchen than go out shopping for new grains, so... any ideas for what to do with it in a summertime-friendly way?

There's a "lost recipe" on here for barley corn salad on here... of course, I didn't pick up corn or bell peppers at the store today, so perhaps this will wait...

I would just pick another grain salad that you like and use the barley in it's place.  doing that, you could really throw any veggies in with it and make a dressing to put over top.  I've never cooked barley before, but it might help to boil it in water (like pasta) instead of steaming to make sure it has a firmer texture that would be nice in salads...

Invent a salad and post the recipe!

  I like to use it like I use wild rice sometimes. Make a cold salad with green onions, parsley, dried cranberries and walnuts with a vinaigrette dressing of your choice. Mix it all with the cooked barley. Great for the hot months.
