sushi

My husband wants to make sushi--what are your favorite vegetables to add?  We know all of the regular additions--avocado, sprouts, carrot, cucumber, mushrooms...any other ideas?  Thanks!

inari is my favorite! mango and asparagus are amazing together. also might want to try various fruit rolls. apple and cucumber are delicious

Unfortunately it's not really the season, at least for me, but strawberries are fab on top of formed sushi!  So are tidbits of pineapple.  Mmm, "fru-shi!"

I generally use snow peas, carrots, cucumber, dried/reconstituted shiitake mushrooms, and various pickled things.  I have added (and liked) parboiled beets, sweet potatoes, spinach, and edamame (they look pretty--but probably not tasty all together!)  Okra sliced crosswise is tasty and pretty on sushi, but careful-- it's got that ooky slimy mucilage.  You can dip it in acidulated water (well, quite a lot of lemon juice in water) to cut the slimy stuff, but I never have much luck with that.  Sea vegetables (other than the nori) are fun tucked into a roll, too-- I generally add wakame if I have it.

However, I have to admit I'm in the whole sushi experience for the pickled ginger and umeboshi.

OK, I know I'm on my own here...bits of kimchee! It's an acquired taste, but once acquired--I haven't quite graduated to "peanut butter and kimchee sandwiches", but it needs ony that!

I love roast veggies, red peppers, carrots, even potatoes, yum! Been thinking of doing a little omelette too! Oh, avocado is a must!

I add chopped okra with shoyu (Japanese soy sauce).  I first wash the okra in hot water quickly, chop them, and season with shoyu. (It's scary cleaning up the cutting board afterward...)

If you like natto (fermented soybeans), add some chopped green onion with shoyu, mix well.

Or, mix natto and okra together.

Natto with shredded daikon root and natto with cucumber is also good.

Shiitake mushroom with sauted carrot
Gobo (Japanese root vegetable) with carrot
Tempura
Sashimi konnyaku with miso dip (I know they are so expensive outside of Japan) are all my favorite.

Or try this one if you like miso.

Saute green onion with oil (I use either canola or sesami oil) and mix with miso.  Try not to use little oil because the goodness of this thing is rich taste of seasoned oil.  This is called "negi miso."  This is salty, so careful not to put too much of it.  I love putting negi miso with cucumber.  I personaly think that is the best combination.

You may think what I listed is too ethnic.  If that's the case, you can experiment with different things since there is no right or wrong.
