Tagine!

I've been very interested in African food lately...and I got a tagine for Christmas!  Does anyone have good recipe suggestions?

Ooh, so want one of those ....
Did you get the cooking version or serving version?  I love a bit of couscous and the last time I slow cooked a spicy tomato-sauce thing with chickpeas and bell peppers, served with harrissa, delish, it would have looked gorgeous in one of the serving tagines thinking about it!  Let us know how you get on

I actually don't know if it's a cooking or serving one...it says on the box that "the tagine can be used for traditional Northern African slow cooked stews" and "conical lid to trap steam while cooking"...but it's also very decorative (bright blue glaze), and it's not glazed on the bottom.  I assumed it's for cooking and serving. (?)

I haven't used it yet.  I need to go shopping.  And soak some chickpeas.

The cooking ones I've seen are brightly painted, but they don't have designs.  The serving ones I've seen have a lot of designs painted on them. 

Do you have a heat diffuser?  They're supposed to help when placed between the stove and tagine.

I want one, but I don't want one.  They look HUGE and I don't have a lot of storage space in my kitchen.

There's no design on it, just plain blue.  I think I have a heat diffuser somewhere....  The bottom part is no bigger than a pie pan, but the top is fairly tall so it would probably be a pain in the ass to store if you have a small kitchen.

If it's plain blue, I'd say it's a cooking tagine. 

It is the height of the lid that's the root of my storage dilemma.

I made my first tagine last night!  I made the recipe sharway suggested (chickpea and pumpkin tagine), with a few changes:

Didn't have saffron so I used turmeric for the color
Used 3 chopped fresh tomatoes instead of canned
Added habanero powder and oregano
Didn't use eggplant because there was no room

I'm not sure if the recipe was meant for an actual tagine...I had to pile everything pretty high for it to fit with the lid on.  It would have been easier in a pot.  It was really good though!  I'll just make smaller batches when I use my tagine in the future.

I don't have a heat diffuser so it burned a little in the middle, but that didn't affect the taste.  I have a gas stove though...I don't think I'd need a diffuser if I had an electric stove.  Oh well, I'll get one for next time.

I should have taken pictures, but I was too hungry.  :-[
